Ingredients (use vegan versions):
- 1 zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 1 roma tomato
- 1/2 yellow onion
- fresh mushrooms
- 1 can blackbeans
- 1 clove minced garlic
- 1 tablespoon balsmic vinegar
- 1 tablespoon olive oil
- rigatonic pasta for 2-4 people
Directions:
Prepare pasta. Chop all vegetables. Mix the balsmic
vinegar and olive oil, then add garlic. Put in small
saucepan and heat. When it reaches a medium-hi temp. add
onion, mushrooms, bell peppers, and zucchini. When the
onions are translucent add blackbeans and tomato and simmer
for 5 min. Toss with rigatoni.
This is a relatively simple dish to prepare. To save time
you can chop the vegetables in advance. It has a hearty
taste with little fat.
Serves: 2-4
Preparation time: 10 min aprox.

- 4oz Chickpea Flour (Gram Flour)
- pinch of salt
- 1/2 teaspoon of chilli powder
- 1/2 bicarb aoda
- little water
- oil to deep fry (not olive oil, try canola)
- Veggies to coat: eggplant sliced, onion sliced,
Directions:
Mix flour, a little water, chilli and bicarb in a bowl to make the batter. Mix well and leave to rest for about 5 mins.
Heat oil until very hot and then dip the vegetables into the batter mixture and drop into the oil, lower the temp. so that the
veggies cook, and not just the batter going brown.
Nice as a starter to a complete indian meal or as lunch with salad.
Serves: 4.
Preparation time: 10-15mins.

Ingredients (use vegan versions):
- 1-2 cans chickpeas (garbanzo beans) amount depends on how hungry you are!
- 1/2-1 onion, finely chopped*
- 1-3 stalks celery, as desired
- s pinch of fresh, minced garlic
- salt/fresh ground pepper to taste
- 1 Tablespoon Nayonaise
Directions:
* If you want to take ‘the edge’ off the onions, you can put them
in a little container with some water and microwave them for 2-4 minutes.
Open cans of chickpeas, drain and rinse well. Put chickpeas in a bowl
and “smash” them up well (do NOT puree).
Add all other ingredients, stirring well & enjoy now or
refrigerate until needed.
Can be used as sandwich filler, or on a bed of spinach,
garnished with shredded carrots, cucumber sliced and fresh,
diced tomatoes, as a main course.
Try different variations of this dish by adding your
favorite herbs & spices, fresh garden vegetables, etc.
Serves: 2-3
