Ingredients (use vegan versions):
- 4 oz Lentils
- 2 teaspoons Tomato Puree
- 1 Onion Chopped
- Chilli Powder – to taste
- Pepper to season
Directions:
Serves: 6.
Preparation time: 20 mins.
Cook the lentils as instructed on the packet.
Boil the onions in a little water to soften.
Add the onions to the lentils, add all the other ingredients and put
in a food procesor for 1 minute to form a smooth paste. The spread
will require chilling in the fridge. The spread does thicken when
chilled.
The spread can be used for sandwiches – add salad to the sandwich.
Or you can use the mixture as a dip.
Ingredients (use vegan versions):
- 3 slices tofurky or other vegan turkey slice alternative
- 2 tablespoon Nayonaise
- 2 tablespoon vegan mustard of choice
- 1 beautiful, juicy, organic heirloom tomatoe (any color) sliced thin
- 5-10 big leaves of fresh bazil (green or purple, I use both)
- 2 slices of vegan french bread
Directions:
Spread Nayonaise and mustard on vegan bread. Place basil leaves
on one side. Place tomatoes on top of basil and then the
tofurky and then the other piece of vegan bread. A hard to
believe it’s vegan lunch with an italian twist. My little
brother couldn’t even believe it wasn’t real turkey!

Ingredients (use vegan versions):
- 1 can butter beans, drain…reserve 2 tablespoon liquid
- 1-4oz. can black olives, chopped
- 16 pimento stuffed olives, chopped
- 2 tablespoon peanut butter, creamy
- 1 tablespoon tofu vegan mayonnaise
- fresh black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon spike
Directions:
Mash beans with a fork…add other ingredients and mix.
Great served with assorted vegan crackers…pretty to look at and
delicious. The flavor improves as it sets…also delicious
served on vegan bread, with lettuce and tomato for a quick
sandwich…

Ingredients (use vegan versions):
- 2 pieces of your favorite vegan bread
- peanut butter
- onion
Directions:
This sounds really strange–but my mom made it all the time
when I was little. Use as much peanut butter as you want,
and then add a few slices of onion. The strong tastes kind
of cancel each other out, so be liberal with the onion. You
can toast the vegan bread and then put on the rest, or you can put
it all together and heat it on a skillet until the vegan bread is
toasted.

- 1 roll – I like bulkie rolls
- vegan cream cheese
- 1 half dill pickle
- 5 or more low fat Doritos
Directions:
Spread cream cheese on one side of roll
then add pickle and low fat doritos.
