Ingredients (use vegan versions):
- 1 avocado
- 4 plum tomatoes
- 2 scallions
- 1/2 lemon
- 2 cloves garlic, or to taste
- 1 jalapeno pepper – or to taste
- 1 tablespoon olive oil
- sea salt
- black pepper
Directions:
The best way to make this is to coarsely chop up all the
ingredients and put it into a food processor, then blend
to the desired consistency. Cut the avocado in half
lengthwise, remove the seed and scoop out the stuff from
the skin. Put it into the processor. Chop up the tomatoes,
scallions, including the green part, garlic cloves and
jalapeno pepper. (adjust the jalapeno pepper to your
taste – more or less depending how hot you like your food)
For the lemon, I cut the lemon in half and removed the
pulp from the skin and removed the seeds. Then I put the
pulp into the processor. Begin processing, stopping a few
times to check and add sea salt and pepper to taste. When
it is of the consistency you want stir in the olive oil
and serve with organic corn chips. It’s also great on
veggie burgers and sandwiches.

small piece of “cheese” on top of the salsa. Enjoy

Ingredients (use vegan versions):
- 1 deliciously ripe avocado
- 1 slice of lemon (or bottled lemon juice)
- 1 heaping tablespoon of fresh salsa
Directions:
Halve the avocado and remove the pit. Take your knife and
finely dice the avocado while still in the shell (this
saves a *big* mess). Scoop out the pieces and mash them in
a bowl. Add a little fresh lemon juice (watch out for the
seeds!) and a healthly dallop of salsa (I like to use the
organic stuff in the ‘fridge case at the health food
store). Give it a big stir.
I like to let this sit while the flavors mingle and I slice
up a cucumber to dip im my guacamole. It’s much tastier
than tortillia chips (and more filling). Carrots are also
good. I had this for dinner a lot when I was on my raw
foods kick (even though the store bought salsa isn’t quite
*raw*…) It’s fast, easy, tasty and healthy. Enjoy it!

Ingredients (use vegan versions):
- 4 pita’s
- oil
- onions
- canned tomatoes
- garlic
- canned kidney beans
- bean sprouts
- cucumber
- salsa or garlic sauce
- any kind of beans you can find
Directions:
Put some oil in a frying pan, add the chopped onions (as much as you like), add the canned tomatoes
with their juice, add the minced garlic, the beans, some mexican-spice mix (a lot if you ask me) let it simmer for awhile
until everything is really warmed.
Put the pita’s in a pre-heated oven (200 C) for 5 minutes.(this is the way you can buy them in Holland
I don’t know if that’s the case in the US, but just use pita’s you know…)
Take them out, slice them open, put some lettuce, sliced cucumber and slices of
fresh tomatoe in, add the bean-mixture.
Top all of this with some salsa or garlic-sause if you like.
It’s a bit tacky to eat, stuff keeps dripping on your fingers and hands but
it’s heavenly and if you don’t use much sauce almost no calories…
Enjoy.
