Ingredients (use vegan versions):
- 4oz Chickpea Flour (Gram Flour)
- pinch of salt
- 1/2 teaspoon of chilli powder
- 1/2 bicarb aoda
- little water
- oil to deep fry (not olive oil, try canola)
- Veggies to coat: eggplant sliced, onion sliced,
Directions:
Mix flour, a little water, chilli and bicarb in a bowl to make the batter. Mix well and leave to rest for about 5 mins.
Heat oil until very hot and then dip the vegetables into the batter mixture and drop into the oil, lower the temp. so that the
veggies cook, and not just the batter going brown.
Nice as a starter to a complete indian meal or as lunch with salad.
Serves: 4.
Preparation time: 10-15mins.

- 1 tin lima beans (drained)
- 1 19 oz tin kidney beans (drained)
- 1 tin corn niblets
- 1 onion, finely chopped
- 1 med green pepper, finely chopped
- 2/3 cup vegan sugar
- 2/3 cup oil
- 2/3 cup cider vinegar
Directions:
Combine first five ingredients in a bowl. Mix the last three
ingredients well and pour over bean mixture. Let chill in fridge for
3 or 4 hours before eating. Use slotted spoon when serving.

Ingredients (use vegan versions):
- 1 pound of kale
- 1 large can of chickpeas
- 4 cloves of garlic
- 4 tablespoon of roasted almonds
- 4 slices of diced slices of French Italian vegan bread
- 4 tablespoon of extra virgin olive oil
- 4 tablespoon of vinegar
- salt
Directions:
Boil kale in a pressure cooker until very tender.
In a large pan, add the oil, and fry the garlic (finely
sliced) and the diced vegan bread. Get these
ingredients appart. Add the vinegar, cooked kale and the chickpeas (rinsed).
Cook for two minutes. If you need to add more salt, now is the
time.
Serve warm, putting the fried garlic and vegan bread
over it.
Try it with a Spanish salad (roman lettuce, yellow onion,
tomato, green olives, vinegar, olive oil and salt), a large
piece of vegan bread and a glass of vegan red wine.

- 1 can manderain oranges…drained
- 1/4 cup minced red onion
- black pepper to taste

Ingredients (use vegan versions):
- about 4 cups sweet potato cubes, peeled
- 1 apple with skin, chopped
- 2 stalks celery, sliced
- 1 small red onion, chopped
- 1 teaspoon fresh ginger, grated
- seasoned rice vinegar to taste
Directions:
Steam potatoes until soft, not mushy, and toss all ingredients lightly,
dress with vinegar to taste.
