Ingredients (use vegan versions):
- vegan bread slices (as many as you want)
- peanut butter
- lettuce
- bananas (sliced long ways)
- apple (sliced or chopped)
- celery (sliced)
- pears
- orange or lemon rind (grated)
- vegan bacon bits
- cranberry sauce (check ing. for vegan)
- walnuts or peanuts (chopped)
- pickles
- crushed pineapple (well drained)
- carrot (shredded)
- dates or raisins (chopped)
Directions:
Add any one or two of the ingredients to your peanut butter sandwich.
My kids look forward to this light meal. I use ingredients
that I have on hand at the time. Too many choices will
confuse them.

- 1/3 Cup Pineapple Juice
- 1/3 Cup Peanut Butter
- 3 Tbl. Soy Sauce
- 1 teaspoon Chili Powder
- 1/2 teaspoon Paprika
- 1/2 teaspoon Cayenne Pepper (or to taste)
- 1/4 teaspoon garlic powder
- Sesame Oil to taste
Directions:
Mix ingredients together. Heat or eat cold with veggies.

Ingredients (use vegan versions):
- 3 tablespoon oil (canola, olive,etc.)
- 1 onion, chopped
- 1/2 coarsely chopped dry-roasted peanuts
- 1 teaspoon . ground coriander
- 1 1/2 lb. carrots, cleaned & sliced
- 1/2 cup chopped fresh cilantro
- 1 red pepper, chopped
- 5 cup vegetable broth
- salt and pepper
Directions:
In a 4 quart saucepan, heat oil and saute onion until
slightly wilted. Add peanuts, coriander, cilantro, red
pepper and carrots. saute 8 min. more. Add stock and bring
to a boil. Reduce heat and simmer until all vegetables are
tender (10 min. or so).
With a slotted spoon, fish out the cooked veggies and puree
them in a blender or food processor. A little liquid makes
this easier. Return to saucepan. Add salt and pepper. Mix
well and serve.
Comments:
Big chunks of carrots and more time simmering mean less
chopping. It all gets pureed anyway.
You can use peanut butter if you don’t have dry roasted
peanuts on hand.
In the summer, this isn’t bad as a chilled soup.
Boiling onions, celery and carrots makes a great veggie
stock. Or, just use bouillion cubes.

- 1 can butter beans, drain…reserve 2 tablespoon liquid
- 1-4oz. can black olives, chopped
- 16 pimento stuffed olives, chopped
- 2 tablespoon peanut butter, creamy
- 1 tablespoon tofu vegan mayonnaise
- fresh black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon spike
Directions:
Mash beans with a fork…add other ingredients and mix.
Great served with assorted vegan crackers…pretty to look at and
delicious. The flavor improves as it sets…also delicious
served on vegan bread, with lettuce and tomato for a quick
sandwich…

- 2 pieces of your favorite vegan bread
- peanut butter
- onion
Directions:
This sounds really strange–but my mom made it all the time
when I was little. Use as much peanut butter as you want,
and then add a few slices of onion. The strong tastes kind
of cancel each other out, so be liberal with the onion. You
can toast the vegan bread and then put on the rest, or you can put
it all together and heat it on a skillet until the vegan bread is
toasted.
