Serves: 4 dozen
Preparation time: 1 hour
Ingredients (use vegan versions):
- 2 ounces oatmeal (roughly 2/3 cup)
- 1.5 ounces raisins
- 1.5 ounces dried apricot, cut up
- 1 apple, diced
Directions:
Cook all of the above together.
Ingredients (use vegan versions):
- 2 sliced bananas
- 1T (homemade) Kumquat syrup.
Directions:
When it’s going to be a strenuous day (like an 80-120 mile bike ride), I’ll
pour a couple of ounces of Grape nuts over the bananas, and kick the apples
up to 2. BTW, Granny Smiths are very good for this kind of preparation.
Serves:
Ingredients (use vegan versions):
- Two medium sized apples. I prefer Granny Smith or Pippins.
- 1-1/2 ounce dried apricot.
- 1-1/2 ounce dried raisin.
- 1 pint apple juice.
- 3 ounces slow-cooking oatmeal.
- spices: Cinnamon, nutmeg, Lemon Rind, [Allspice]
Directions:
I tried this one day when I had a bit of apple juice on hand. The
only fat is from the oatmeal proper. If memory serves, there’s 1 gm
of fat per ounce of dry oatmeal. Feel free to substitute.
Core the apples, [peel if you insist] and chop. Chop the dried
apricot. Combine the apples, apricot, raisins with the apple juice
and heat to boiling. Let simmer a minute, then add the oatmeal. Cook
for 5 minutes, then turn off the heat and cover for a couple of
minutes. Serve over or with sliced banana.
Serves:
Ingredients (use vegan versions):
- 1/2 cup oatmeal
- 1 cup water
- 1 to 2 tablespoons peanut butter
- 1 to 2 tablespoons jelly
Directions:
Mix oatmeal and water, and cook
according to package directions. Stir
in the peanut butter and jelly.
This is really good! I usually use 2
tablespoons natural peanut butter and 1
tablespoon strawberry jelly.
Serves: 1
Preparation time: 5 minutes
Ingredients (use vegan versions):
- 2 cups vanilla flavored almond, soy or rice milk
- 1 cup whole oats
- 1 apple, not peeled, diced
- 1 tablespoon (or more) chopped walnuts
- 1 large fresh date, pitted, chopped
- cinnamon to taste
Directions:
Put all ingredients into a medium
saucepan. Bring to a boil, stirring
occasionally. Turn down to simmer for approximately 10 to 15 minutes, stirring to prevent
sticking.
Add a bit more liquid if the oats are
drying up before they are really
creamy.
The longer you can get the oats to
simmer in the liquid the softer and
creamier they will be. The apple
should be very soft when done. My two
year old son loves this oatmeal, and
when have a large bowl in the morning, I find it really curbs my appetite for
sometime. I never was a fan of oatmeal
unless it was doused in butter and
vegan sugar, so I was pretty pleased with
myself when I discovered it could
really be good without all that crap
it in. Feel free to list other items
or suggestions to make
it better.
Serves: 2 large portions
Preparation time: approx. 15 minutes
