Oatmeal Power Breakfast

Ingredients (use vegan versions):

  • 1/2 cup rolled or steel cut oats (please no instant or quick, the longer cooking taste SO
  • much better)
  • 1 cup water
  • 2 dried apricots cut into smallish pieces
  • 2 Tbsps Wheat Germ
  • Non Dairy Creamer (unflavored Mocha Mix or Coffee Mate-Lite) I know it is stabilized with
  • chemicals, but it tastes so creamy
  • vegan brown sugar

Directions:

Place oatmeal, water and apricots in a microwave safe bowl and cook at medium power,
uncovered, for 5-6 minutes. Let stand for a minute. Stir well and top with Wheat Germ,
brown vegan sugar and creamer. This is so yummy on a cold morning before school or work or the
gym.

Because wattages differ on each microwave, be sure to peek at the progress of your oatmeal
the first time, to avoid a messy spill over. It took a couple times to get mine right and
now it is absolutely perfect.

Better Than Oatmeal

Ingredients (use vegan versions):

  • 2/3 cups bulgur (dried cracked wheat)
  • 1 1/3 cups cold water
  • dried fruit of choice, chopped (I love craisins, apricots, raisins, papaya)
  • nuts (pecans are yummy!)
  • favorite spices (cinnamon or nutmeg work well)
  • seeds (sunflower, pumpkin)
  • brown rice syrup

Directions:

Add the bulgur to cold water, bring to a boil, and then down
to a simmer. Simmer in a covered pan for 12-15 minutes. I
love to cook it so that it pops out, a little like popcorn,
and is very moist like oatmeal. After it is cooked
thoroughly, add the dried fruit, seeds, and nuts…however
much you want. A handful of each, perhaps. It’s your
recipe now. Add spices if you want. Then, put it in a cute
little bowl and drizzle it with plenty o’ syrup. I must
admit I used honey, but brown rice syrup, corn syrup, or
maple syrup would all work very well. Serve hot! Leftovers
can be refrigerated, preferably without the syrup on top.
Eat leftovers within a couple days. Yum.

Easy Oatmeal

Ingredients (use vegan versions):

  • 2/3 cup of 100% oatmeal (large flakes-no quick stuff)
  • approx. 1 cup of water
  • 1/4 cup raisins

Directions:

Put the oatmeal into a bowl, add the raisins. Then pour in
enough water so that it covers the oatmeal completely.
Cover it and place it in the fridge over night. Throughout
the night, the oatmeal has soaked up the water and sweetness
of the raisins. In the morning, you can enjoy a cool, fresh
tasting bowl of oatmeal. Not cooking it helps it maintain
it’s full nutrients.

Serves: One

Awesome Oatmeal

Ingredients (use vegan versions):

  • 2/3 cup organic oatmeal (not the quick cooking kind)
  • 1.5C water
  • dash sea salt
  • 1 bartlett pear, washed, cored and chopped coarsely
  • 1/4C walnuts, coarsely chopped
  • 3T organic vegan maple syrup

Directions:

Add salt to water and bring to a boil. When water is viigorously boiling, add oatmeal.
Boil oatmeal briefly, then lower heat to simmer, and cover. Get in the shower. ( Make it
snappy- there are others waiting) Get out of the shower. By the time you are dressed,
the oatmeal will be perfect. Add the pears, walnuts, and maple syrup. If you are cooking
for one, pack up the remaining portion for your at-work mid morning or mid afternoon
snack. It’ll keep you going and warm your heart if you have memories of your mom serving
you oatmeal. :-}

Ingredients (use vegan versions):

  • 1/3 cup Quick Oatmeal (Quaker, etc.)
  • 3/4 favourite juice (my fav. is apple) diluted with H2O
  • toppings: raisins, nuts, or other dried fruits

Directions:

Using microwave: pour diluted juice into bowl, heat (high) for approx. 45 sec.
then add oats and heat for 1 min, stir, then heat for 30 sec. more if needed.
Oatmeal should be thick. Allow to cool before tasting!!
