Ingredients (use vegan versions):
- 1 medium potato (yukon gold or red potatoes are the best)
- 2 slices of fresh whole grain vegan french bread
- 1-2 slices soy cheese
- sliced tomato
- rosemary to taste
- dillweed to taste
- dash salt
- dash pepper
Directions:
Slice the potato into medium thick slices (you will have leftover potato so
I suggest you
bake the rest and save it for later). Layer about 3-5 slices (more or less to
your
preference) between pieces of vegan bread. Cover in foil and bake for 45 minutes to
1 hour or
until potatoes are tender. Go read a good novel while this is baking. You can
probably
polish off “Of Mice and Men”. After potatoes are to your liking, open sandwich
and top
with soy cheese, sliced tomatoes and seasonings. Replace top slice of vegan bread and
either
bake or broil (if you want to toast your vegan bread) for about 5 minutes or until
cheese is
“melty”. I love to eat this for lunch or breakfast with orange juice.:)

Ingredients (use vegan versions):
- 1 cup organic brown rice, washed
- 5 cups water
- small pinch of sea salt or piece of kombu, soaked and diced
- 3 to 4 shiitake mushrooms, soaked, stems removed, and diced, add the water
- 1 cup daikon, quartered and sliced thin (white Oriental radish)
- 1/4 cup celery, sliced on a thin diagonal
- 1/2 cup squash, cubed
- 1/2 cup carrot, diced
- 1/4 cup cabbage, diced
- 2 level teaspoon barley miso, pureéd
- chopped scallion, chives, or parsley, for garnish
Directions:
This porridge is very energizing. Make it and eat it every
morning for a week along with the rest of your breakfast
for a kick start on the day.
Place the rice, water, sea salt or kombu and shiitake in a
pressure cooker. Cover and bring up to pressure. Reduce
flame to medium-low and cook for 45 minutes. Remove from
flame and allow pressure to come down. Remove cover. Add
the daikon, squash, carrots, and cabbage. Cover with a
regular lid, not a pressure cooker lid, and bring to a
boil. Reduce the flame to medium-low and simmer several
minutes until the vegetables are tender. Reduce the
flame to low, add the miso, and mix well. Simmer, without
boiling, for 2 to 3 minutes. Place in serving bowls and
garnish.

- 1/2 cup rolled or steel cut oats (please no instant or quick, the longer cooking taste SO
- much better)
- 1 cup water
- 2 dried apricots cut into smallish pieces
- 2 Tbsps Wheat Germ
- Non Dairy Creamer (unflavored Mocha Mix or Coffee Mate-Lite) I know it is stabilized with
- chemicals, but it tastes so creamy
- vegan brown sugar
Directions:
Place oatmeal, water and apricots in a microwave safe bowl and cook at medium power,
uncovered, for 5-6 minutes. Let stand for a minute. Stir well and top with Wheat Germ,
brown vegan sugar and creamer. This is so yummy on a cold morning before school or work or the
gym.
Because wattages differ on each microwave, be sure to peek at the progress of your oatmeal
the first time, to avoid a messy spill over. It took a couple times to get mine right and
now it is absolutely perfect.

- Applesauce – try to get the kind without added suger.
- Granola
Directions:
When I stopped drinking milk, I didn’t know what to eat in
the morning instead of cereal. This is a great substitute.
I like it even better than cereal with milk!
Just put some applesause in a bowl and add some granola to
it. Easy, tasty and healthy.

Ingredients (use vegan versions):
- 2 rather large baking potatoes
- a liberal amount of seasoned salt
- slightly less Hot Shot!, pepper blend (or any like product)
- garlic powder, chili powder, or anything else with a kick
- water
Directions:
Chop the potatoes into about half-inch pieces. In a bowl
mix potatoes with spices, salt, and about a half cup of
water. Dump into a hot frying pan and cover. Let cook
until potatoes are mushy, adding water if necessary to keep
it from burning.
Depending on how much pepper you add, you might want to have
the telephone handy to dial 911, or at least a gallon or two
of ice water. An excellent if scary side with other
breakfast foods, or wrap up in a tortilla, or use
as weaponry, or whatever.
