Ingredients (use vegan versions):
- desired amount of plantain
Directions:
Buy plantains how you love them; (I
love to let them sit and get REALLY
ripe, with black markings on them) the
darker you let them get, the sweeter
them become.
When plantains reach desired
sweetness and/or texture, then cut off
both hard ends & slit/peel partially or
fully. Microwave on half to full power
depending on how much wattage your
microwave has. Cook until skin blackens
or the plantains sizzle/get noisy
[you’ll know when they’re ready. Eat as
banana or use a spoon to eat the lovely
pulpy mush!
