Ingredients (use vegan versions):
- 1 can red beans or black beans… drained and flushed with water
- 2 oz. diced tofu cheese
- 1 can manderain oranges…drained
- 1/4 cup minced red onion
- black pepper to taste
- 1/4 teaspoon fresh cilantro
- 1/4 teaspoon minced garlic
Directions:
Combine and chill…serves 3.
