Ingredients (use vegan versions):
- However much pasta you want to use
- About 3 carrots diced small per bag of pasta
- Celery diced small (keep the amount close to the amount of carrots)
- Whatever other vegetables you want to put in diced
- Italian dressing preferably freshly made(a cup or so per bag)
- Any spices such as salt or pepper or oregeno are good
Directions:
Cook the pasta until it is soft and not too chewy (about 20 minutes). Drain the pasta and
run under cold water until its cold. Or put it in the refrigerator and let it chill.
Add the diced vegetables, spices, and dressing.
Enjoy
Sorry about the vagueness of this recipe. Just make it the way you like and you will be
much happier with it.

Ingredients (use vegan versions):
- 1/4 stick of margarine
- 1 cloves worth of garlic (or more)
- 1 cup of plain soymilk
- 1 tablespoon of flour
- 1/2 cup of vegan parmesan vegan cheese
- 1/4 cup of finely grated vegan mozzarella cheese. (I used Veganrella)
- salt, pepper, garlic powder
Directions:
1. Melt the margarine in a saucepan.
2. Add the garlic and let it sit for a
couple minutes so the garlic flavor
can infuse into the margarine. Stir it!
3. Add the soymilk and the flour.
Whisk it.
4. Add the seasonings and the vegan cheeses.
Whisk it thoroughly until the vegan cheeses
melt. It will start to really thicken
up once it gets hot.
Serves: 4

Ingredients (use vegan versions):
- 2/3 cup water
- 1/4 cup vegan white wine vinegar
- 3 tablespoon powdered fruit pectin
- 1 tablespoon snipped fresh dill
- 1 tablespoon vegan sugar
- 1/4 tablespoon garlic powder
- 1/4 tablespoon dry vegan mustard
- 1/4 tablespoon pepper
Directions:
In a screw-top jar, combine all ingredients. Cover; shake. Chill up to 3
days. Shake before serving. Makes 1 1/4 cups.
I found this recipe in the Mother’s Day card my son gave me.

Ingredients (use vegan versions):
- 1/3 Cup Pineapple Juice
- 1/3 Cup Peanut Butter
- 3 Tbl. Soy Sauce
- 1 teaspoon Chili Powder
- 1/2 teaspoon Paprika
- 1/2 teaspoon Cayenne Pepper (or to taste)
- 1/4 teaspoon garlic powder
- Sesame Oil to taste
Directions:
Mix ingredients together. Heat or eat cold with veggies.

Ingredients (use vegan versions):
- 2 vegan pita breads
- olive oil
- black olives, sliced and pitted
- fresh dill, chopped
- tomatoes, sliced
- freshly ground black pepper
Directions:
Set oven to broil. On vegan pita breads, cover base with
tomatoes, sprinkle with olives and dill to taste, drizzle
with olive oil and sprinkle with pepper. Place in oven on
broil for 5 minutes or less, until brown around the edges.
Serves: 1
