Baked Sweet Potato Chips

Ingredients (use vegan versions):

  • sweet potato
  • vegetable cooking spray
  • favorite spice (I use garlic salt or something called crazy salt)

Directions:

Heat oven to 350. Peel sweet potato (works with yams too) and slice
thin, as if for a thick potato chip. Cover a cookie sheet or baking
pan with foil, sprayed lightly with vegetable spray. Lay sweet potato
chips on the foil, rubbing each one slightly in the veggie spray.
Then lightly spray the tops with veggie spray, sprinkly with your
favorite spice. Bake for 20 minutes, turn, sprinkle that side, and
bake for another 10 minutes.

Make a lot, because EVERYONE including small children, SO’s and
teenagers who usually stick up their noses at healthy food, tend to
like these.

Applesauce Oatmeal Drops

Ingredients (use vegan versions):

  • 2 apples, peeled, cored and chopped.
  • 1/4 cup lemon juice
  • 1/2 cup vegan sugar
  • 1 teaspoon cinnamon

Directions:

Simmer apples over medium heat about 20 minutes or until very soft.
Place in blender and add the other ingredients.

Dehydrate in a dehydrator or in oven. To dry in an oven just set temp
at lowest possible setting –about 140 degrees would be good. Dry
until fruit feels leather like; yet pliable. This would probably best
be done on parchment paper, Remove the leather while it is still warm
and roll it up.

VLF Chex Mix

Ingredients (use vegan versions):

  • 5 cups wheat chex
  • 5 cups rice chex
  • 5 cups cheerios
  • 2 - 3 cups fat free pretzels
  • 1/2 cup fat free non-hydrogenated vegan margarine melted with
  • 1/2 cup fat free Italian salad dressing
  • 2 to 4 tbls. Tiger Sauce or Hot Sauce (Gives wonderful zip) (optional)
  • 2 to 4 tbls. soy sauce or to taste
  • garlic powder to taste

Directions:

Mix together the dry ingredients in large bowl. Melt together margarine,
dressing on low heat (may look weird since it won’t melt like normal fat
containing margarine, but let it go a few minutes than use a whisk to mix
it and it’s fine). Add Tiger sauce, soy, and garlic powder. Stir and
turn off heat allowing to cool for a few minutes.

In the meantime, heat up your oven to 250 degrees and spray two cookie
sheets lightly with a garlic or butter flavored spray (Spray is optional)

Drizzle slowly (a little bit at a time) the liquid mixture over the dry
mixture. Stir, drizzle some more, etc. I really take my time mixing so
that I don’t make anything soggy, and everything gets well coated.

Spread in a single layer on baking sheets and bake 75 minutes. Every 20
minutes I open the oven, stir the mix a little and close it back up.
Sometimes I reverse which oven racks the pans are on.

When done, shut off the oven and open the door slightly. I leave
the pans in the oven to cool and continue drying. Store in an airtight
container.

The cheerios remind me of peanuts–hard and crunchy (They shrink).

We love this zesty snack. I hope you do to!

Quick Nachos

Ingredients (use vegan versions):

  • 1 large onion
  • 1 tin chopped tomatoes
  • 1 tin red kidney beans
  • 1 tin baked beans
  • 1 teaspoon cumin powder
  • 1 teaspoon chillie powder
  • 1 teaspoon paprika powder
  • 2 teaspoons tomatoe puree
  • tortilla chips
  • grated soy cheese for topping
  • oil for frying

Directions:

1) Chop the onions(not too fine) and fry in oil
in a large pan (i use a wok) until soft.

2)Add the various spices to the onions and stir.

3)Now pour in the tinned tomatoes, followed by tinned kidney
beans, followed by tinned baked beans and stir the mixture
thoroughly. Add the tomatoe puree and stir again.

4)Bring to the boil and let the mixture bubble for about 15min
or until thickened. Stir continually during this process to avoid
mixture sticking to bottom of pan.

5)Pour contents into a large oven proff dish (lasagne type rectangle
dish) and distribute evenly.

6)Cover the mixture with a layer of tortilla chips

7)Sprinkle a few handfulls of cheese over the tortilla chips

8)Place in oven (about gas mark 7) for 5-10 minutes.

9)Remove and serve whilst hot. (Hmm. my mouth waters at the thought!)

(A very cheap, very quick, an very appetizing meal)

Ingredients (use vegan versions):

  • 1 Apple
  • Peanut Butter

Directions:

Cut the apple in half. Spread peanut butter on the apple. Eat and enjoy!

Serves: 2

Preparation time: 8 min.
