Open-Faced Miso Tofu Sandwich

Ingredients (use vegan versions):

  • 1 medium-thick slice wholegrain vegan bread
  • miso
  • nut or seed butter
  • 1/2″ thick slices firm or extra firm tofu

Directions:

Toast the vegan bread. Spread on a very thin layer of miso and
then a thicker layer of nut or seed butter. Top with tofu
slices. Now if you want, you can broil this for five
minutes, but it is not necessary. If you have a toaster oven
it is possible to “toast” the tofu along with the vegan bread,
if you do not like it cold from the fridge. This warms the
tofu.

Nutrition Information: Better than a hamburger!

An Iowan Treat

Ingredients (use vegan versions):

  • Peanut butter
  • About 6-7 radish slices
  • Vegan mayo
  • 2 slices of vegan bread

Directions:

Spread mayo on one slice of vegan bread,
peanut butter on the other,
and add the radishes in between.
Strange at first, but very addictive!

Serves: 1

Preparation time: 5 minutes

Ingredients (use vegan versions):

  • nutritional yeast (Definition)
  • sliced vegan bread (rye is good or pumpernickel or wheat)
  • sliced tomatoes
  • fakey cheese slices (optional)
  • vegan mustard

Directions:

Spread mustard (a grey poupon type works best) onto vegan bread slices. On top of the mustard
sprinkle the nutritional yeast, not to much! Use just enough to stick to the mustard.
Put slice of fake cheese (or seitan or tempeh) on vegan bread. Top with slice of tomato and
other piece of vegan bread.

Some other ingredients taste good too!: seitan, tempeh, lettuce, and whatever sounds good.

You can also just make a quick sandwich with just the mustard and nutritional yeast.
I used to make these when I was babysitting my stepsister, she loved them and she is a
VERY picky eater!

Serves: depends

Preparation time: less than 5 minutes.

Peanut Butter and Pickle Sandwich

Ingredients (use vegan versions):

  • 2 slices of wheat or white vegan bread
  • peanut butter
  • dill pickle

Directions:

Spread the peanut butter on one side of one slice of vegan bread.
Slice the pickle the short way in thin slices.(1/8 to 1/4
inch is best) Place pickle slices on the peanut butter so
that some of the peanut butter is still showing. You will
probablly have left over pickles. Place other piece of
bread on top of pickles and cut in half with a knife.
Enjoy!

Baked Avocado Sandwiches

Ingredients (use vegan versions):

  • avocado
  • sub or grinder roll
  • lettuce
  • red cabbage
  • cucumbers
  • carrots
  • vegan “cream cheese”
  • chives

Directions:

Mix cream cheese with chives, go really heavy on the chives.
Spread on rolls. Slice avocado thinly and lay on cream cheese.
Peel carrots then shave with peeler. Add lettuce, cucs, red cabbage
and tomatoes (if you like). Bake until vegan bread is crispy and
browned, about 10 to 15 min. These are fantastic!!! (Flordia
avocados have about 1/2 the fat of California or Hass avocadoes.)
