Italian Special

Ingredients (use vegan versions):

  • 1 vegan bread roll (white, wholemeal, rye etc..)
  • a few sprigs of parsley
  • 1/4 cup pitted black or stuffed olives
  • a dash of lemon juice
  • a little olive oil
  • pepper
  • a slice of tofu
  • 1 tablespoon sundried tomato paste
  • lettuce leaves

Directions:

Marinade the tofu in the lemon juice and olive oil for a
few minutes. Split vegan bread roll in half. Slice the olives.
Spread the vegan bread with sundried tomato paste and scatter the
olives over.

Place the tofu over everything, sprinkle all over with
pepper and/or salt, and top with the lettuce leaves.
This sandwich is great for taking to school, work and
picnics.

Serves: 1

Preparation time: 10 minutes

Quick Veggie Lunch/Dinner Sandwich

Ingredients (use vegan versions):

  • Tomatos
  • Zucchini
  • Cucumbers
  • Carrots
  • Pickles
  • Cheese substitute
  • vegan Dijon mustard (I prefer Grey Poupon)
  • Any vegan bread (I like to use a toasted long roll)

Directions:

Toast vegan bread (optional). Chop vegetables. Spread mustard on
bread. Put vegetables + cheese on sandwich. Eat. I told you
it was easy!

Serves: 1

Preparation time: depends on how fast you chop things…about 10-15 mins

Hummus Surprise Sandwich

Ingredients (use vegan versions):

  • 2 slices of firm, chewy vegan bread of choice
  • 2 tablespoon hummus of choice
  • A handful of assorted sliced or diced veggies or other things.. i.e. cukes,
  • carrots,tomatoes, olives,
  • bazil, beans,onions, pickles, whatever…be creative!

Directions:

Spread hummus on each slice of vegan bread. Top each slice with
whatever you’ve decided sounds good or looks good…several
things together is best! Eat as open-face sandwich. I love
coming up with new variations of this and never get bored.
Remember, there’s some great hummus flavors out now..even at
the local supermarket.

Jens Best ever Sandwich

Ingredients (use vegan versions):

  • 1 bagel (any flavor)
  • 3 tablespoons of Hummus
  • sliced red or green pepper (or both)
  • fresh spinach leaves
  • sliced cucumber
  • sesame seeds (optional)

Directions:

1. slice bagel in half

2. slice vegetables on both sides of bagel

4. spread sesame seeds on hummus

5. place sliced vegetables on top of hummus

6. close the bagel and enjoy!

BBQ Portabello Sandwich

Ingredients (use vegan versions):

  • 2 large Portabello Mushrooms
  • 3 Tbsp.Olive Oil
  • 3 tablespoon each bazil, Oregano, Parsely (USE FRESH)
  • 2 Tbsp.balsamic vinegar
  • 3 large cloves of Garlic
  • 6 Leaves Arugula
  • Salt and Pepper to taste
  • Roasted Sweet Red Peppers
  • 4 Slice of your favorite vegan bread or 2 rolls

Directions:

In a blender combine the olive oil, balsamic
vinegar, garlic, salt and pepper and fresh herbs until the
items are combined. Clean and discard the stem of the
mushrooms and place in a resealable bag. Pour the marinade
from the blender into the bag over the mushrooms. Let stand
for at least 30 minutes turning every 5 minutes. Heat the
grill. Grill the mushrooms and continue to baste during the
cooking time. Save some marinade to top off your sandwich.
Lightly brush the vegan bread with olive oil and toast on the
grill. To build the sandwich take a teaspoon or two and put
it on one slice of vegan bread for each sandwich. Place two or
three leaves of arugula on the vegan bread and then place on the
roasted red pepper slices. Next place the grilled mushroom
and salt and pepper to taste. Top off with the other slice
of vegan bread.

Serves: 2
