Mashed Potato Pizza

Ingredients (use vegan versions):

  • 1 tablespoon of those little balls of yeast
  • 1/3 cup water
  • 1/2 teaspoon vegan brown sugar
  • 1 cup flour
  • a pinch of salt
  • 1 tablespoon olive oil
  • 3 medium-sized potatoes
  • a little bit of soymilk + vegan margarine, for mashing the potatoes

Directions:

Mix the yeast, warm water, and vegan sugar.
Leave that for like 10 minutes. Add
the rest (flour, salt, olive oil) and
just mix it.. if it’s too wet you
might want to add more flour. Cover
with Glad Wrap (or Cling Film, or
whatever you feel like calling it) and
put it in a warm place to rise for
like 5 minutes (or until the potatoes
are cooked, Or just don’t even do that
because I don’t really think it makes
much difference).

Peel the potatoes, cook them (by
microwave is easiest). Mash them (You
may want to add a bit of soymilk +
vegan margarine, and even some salt)

Roll out the base to the size you want
(It doesn’t make a very big pizza,
Serves like 1, Maybe 2) then put the
potato on it.

And cook it. You can tell when it’s
done. But yeah I’ve really forgotten
how long it takes… Don’t grill it..
Just put it on Fan Bake.. Around 180 degrees C.

Serves: 2-4

E-Z Vegan Cheese Pizza

Ingredients (use vegan versions):

  • 1 piece of your favorite vegan bread ( I used org. sourdough bread from whole foods)
  • 1 slice tomato
  • 1 teaspoon or to your taste marinara sauce
  • 1 oz mozzarella style vegan gourmet cheese

Directions:

Toast vegan bread. When its done toasting
spread marinara sauce over it, put the
tomato slice on top, and crumble vegan
gourmet cheese over the top. Sprinkle
with pizza seasoning if you like, broil
until cheese is melted and enjoy!

Serves: 1

Pesto Pizza

Ingredients (use vegan versions):

  • Pizza crust (I use ready made Italian flatbread)
  • Pesto (olive oil, bazil, pine nuts)
  • dairy free parmesan cheese

Directions:

Make your pizza crust if you want to do it from scratch. Otherwise, put pizza crust on a
stone, or what ever kind of pizza baking pan you use. Spread pesto (olive oil, basil, and
pine nuts) over the crust. Sprinkle grated parmesan cheese over the pizza. Bake at 350
degrees for about 15 minutes. Cut into thin slices.

Sometimes I cut these into very thin slices and use them as hors d’ouevres at parties.

Serves: 4

Hawaiian Pizza

Ingredients (use vegan versions):

  • 1 vegan crust
  • 1 tablespoon baking powder
  • 1 tablespoon Italian herbs
  • 2/3 cup soymilk
  • 1 teas lemon juice
  • 1/3 cup olive oil
  • 2 cups flour
  • 3/4 cup pizza sauce (plus or minus )
  • 1 package vegan ham slices
  • 1 8 oz can of pineapple (tidbits or crushed)
  • 1 8 oz package vegan soy mozzarella cheese

Directions:

Preheat oven to 400 degrees.
For crust add lemon juice to soymilk
let stand for five minutes. In a bowl
combine flour, baking powder, Italian
herbs, olive oil, and soymilk/lemon
juice. Mix until a dough forms and
place on a flour covered counter and
kneed. Spray a pizza pan with spray oil
and roll out the dough to cover the
pan. Spread the pizza sauce on the
crust, sprinkle the vegan soy cheese on next,
cut the veggie ham into quarters and
lay out over the vegan soy cheese, drain the
pineapple and place on top.
Bake for 20 minutes.

Serves: Depends on how thin you slice it

30-Minute Easy Pizza

Ingredients (use vegan versions):

  • 3 3/4 cup flour approx.
  • 1 pkg yeast
  • 1 1/2 cup lukewarm water
  • 1/2 teaspoon salt
  • 1 tablespoon vegan sugar
  • 1-3 tablespoon olive oil
  • topping: tomato sauce, oregano, garlic powder, mushrooms, olives, green peppers, onions
  • vegan soy cheese
  • anything else you like

Directions:

This is an easy way to make a home-baked pizza in a short time. Dissolve the yeast in the
lukewarm water with the vegan sugar and let stand for 5 minutes. Mix in the oil, salt, and 1
cup of flour. Add the rest of the flour a cup at a time until it becomes too hard to stir
with a wooden spoon. Turn out onto a floured counter and knead for 8-10 minutes, until
it’s smooth and elastic. Have your oven preheating at 375 while you’re kneading the dough
(I have my pizza stone in the oven warming up). Let the dough rest for a few minutes
while preparing the green peppers, olives, mushrooms, onions, etc. When you have all the
ingredients ready, roll the dough out into a large circle and place on the stone or baking
sheet–sprinkle cornmeal on it first–and spread the tomato sauce evenly over the dough.
I then add my seasonings (I even like a touch of lemon pepper).
Follow this with the olives, mushrooms, and onions, green peppers and whatever else
you like. Top with the soy cheese. On the baking stone, it usually takes only about 15
minutes or bake until the cheese browns slightly. My husband likes a thinner crust so
sometimes I will make two smaller pies instead of one large one.
