Bean and Potato Tacos

Ingredients (use vegan versions):

  • 1 can vegetarian refried beans
  • 1 large potato
  • 1-2 cups lettuce
  • tortillas

Directions:

This is really a simple recipe. All you have to do is dice
your potatoes into about 1/4 inch squares then fry them in
a little bit of olive oil on medium heat with a lid, if
possible. Put spices on it to your taste (I use lots of
vegit and johnys seasoning salt). While those are frying,
heat up your refried beans however you prefer them. Once
your potatoes are done, mix the beans and potatoes in a bowl
and, fix your taco with lettuce, sauce and whatever else you
like on it! tada! Excellent mix for tacos, and is also a
good mix for breakfast burritos!

Good to be served with mexican rice.

Serves: 3-4

Vegan Bean "Quesadilla"

Ingredients (use vegan versions):

  • 1 flour tortilla
  • 1 package of mild taco bell sauce (or any sauce you prefer)
  • 1/2 cup of canned vegetarian refried beans
  • 2 teaspoons of soy non-hydrogenated vegan margarine

Directions:

Spread the beans on the flour tortilla. Then spread the taco
bell sauce over the beans. Fold the tortilla in half, making
it look like a quesedilla like dish. Heat a skillet on a
medium temperature, melt the soy margarine. Place the
“quesadilla” on the skillet, flip over when a golden-
yellowish color. Finished when both sides are a golden-
yellowish color.

Serves: 1

Great Northern Burritos

Ingredients (use vegan versions):

  • 2 cups cooked great northern beans
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1/4 cup slivered almonds
  • 2 cups cooked Spanish style rice
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • olive oil
  • salt and pepper
  • 1 pkg. tortillas

Directions:

1. Saute onion, garlic and bell pepper until softened.
Stir in beans, basil and organo, almonds, salt and pepper.

2. Over medium-high heat, warm tortillas one at a time,
flipping once. Once tortilla is hot(working fairly
quickly), spoon rice, then bean mixture into the center of
the tortilla. Fold in the left and right sides, and roll
burrito closed from the bottom to the top (that doesn’t
sound very clear, but I imagine you know the routine).

Serves: 6

Melissas Veggie Burritos

Ingredients (use vegan versions):

  • 1 can refried beans
  • 1 tomato
  • 1 green pepper
  • 5 or 6 mushrooms
  • soy cheese (cheddar)
  • tortilla shells

Directions:

Preheat oven to 350 degrees.

Dice tomato and green pepper, slice mushrooms, and shred
cheese. Spread refried beans on bottom of tortilla shell.
Add veggies, and top with cheese. Wrap up burrito and
cover with aluminum foil. Repeat until ingrediants are
gone. Put burritos in oven for about 15 minutes or until
cheese is melted.

Serve with salsa, vegan sour cream, guacamole,etc.

Serves: about 6

Bean Tostada

Ingredients (use vegan versions):

  • tortilla shells (one tortilla for each person)
  • refried beans
  • salsa
  • lettuce
  • oil for frying

Directions:

Put about 1/2 cup of oil in frying pan and heat. When you
drop water in the pan and it sizzles it is ready.
Carefully place one tortilla in the oil and use tongs to
flip sides. Keep flipping sides until both are brown.
Place fried tortilla shell on a plate with paper towels to
soak up the oil.

While frying the tortillas cook the
refried beans in the microwave for a few minutes (or
stovetop).

Once beans and tortillas are done put fried
tortilla on a plate, spread refried beans over tortilla,
top with lettuce and salsa. Not the healthiest treat, but
it satisfies those cravings for fried foods.
