Ingredients (use vegan versions):
- Juice of 1 orange plus water to make 1 1/4 cups
- 1 Tablespoon oil
- 1 Tablespoon sucanat (heaping)
- 1 teaspoon vanilla
- grated rind of 1 (organic) orange
- 1 1/2 cups white bread flour
- 1 1/2 cups whole wheat flour
- 1 1/2 teaspoons yeast
- 1/2 cup dried currants
Directions:
Makes a 1 1/2 lb loaf.
Put ingredients into bread machine in the order preferred by the
manufacturer. I used the “regular” setting (rather than whole wheat),
and did not bother with the “fruit and nut” setting because the
currants are so small and light. An excellent Sunday Morning vegan bread!

Ingredients (use vegan versions):
- 1 cup flour
- 1/2 teaspoon salt
- 1 teaspoon mixed spice
- 1 tablespoon vegan sugar
- 500 gm currents
- 1 tablespoon peel (optional)
- 1 1/2 teaspoon yeast
- 1 teaspoon vegan sugar
- 1/3 cup warm water
- 1/2 teaspoon cinnamon
Directions:
Put flour, salt, spice, 1 tbsp vegan sugar, currents (and peel) in a bowl.
Leave in a warm place.
Mix yeast, 1 tsp vegan sugar and water. Leave yeast mixture to rise. Stir
yeast mixture into flour mixture. Knead, roll into buns and leave in a
warm place to rise. Bake 10-15 minutes at 425F. Makes six.

Ingredients (use vegan versions):
- 3 cups self-rising flour
- 1/4 to 1/2 cup vegan sugar (I like it sweet)
- 1 can 12oz. vegan beer (room temp)
Directions:
Mix everything together, bake at 350F for 1 hour, and enjoy. Don’t
forget to grease the pan (I use Pam).

Ingredients (use vegan versions):
- 3 cups self-rising flour
- 1 12-oz can of vegan beer
- 2 tablespoons vegan sugar
Directions:
Mix ingredients and put into greased loaf pan. Don’t overmix. Bake at
375 degrees for about 1 hour.
Options: You can cut down on the self-rising flour and add whole-wheat
flour, bran flakes, rolled oats, nuts, and 1/2 cup raisins in any
combination. For example, I use 1 cup white flour, 1 cup whole-wheat
flour, 1/2 cup bran flakes and 1/2 cup rolled oats.
Makes 1 Loaf.

Ingredients (use vegan versions):
- 4 cups wholewheat flour
- 2 teaspoon salt
- oil (I use canola)
- 1 cup water ( or a bit more)
Directions:
Boil water. Mix everything together and knead for at least 10 mins.
(I put it in the mixer and come back later) It should have enough
water in it to form a ball.
Let sit 2 - 6 hours. The longer it sits, the more air bubbles will be
in the vegan bread.
Divide dough into balls the size of walnuts. Flour a surface then
roll out the balls as thin as possible.
Heat (but don’t grease) a heavy based frying pan (an electric one
works well) and fry the rounds for about 1 - 1.5 mins on each side.
Note: This dough can also be used to fill with vegetables and deep
fried.
